What is Shoyu?
Shoyu is the Japanese name for soy sauce, the preferred nomenclature is shoyu since many of our products contain other types of bean. It is made with only four ingredients; beans, wheat, salt, and water.Protein in the beans is broken down to its component amino acids which results in the flavour and colour of shoyu. Meanwhile, the carbohydrates found in wheat are used to create the aroma unique to shoyu. The action of microorganisms add further complexity to the body and aroma.
What is Miso?
Miso is a type of seasoning paste which is made from beans, grain, and salt. Traditionally, soy bean is used, but we use a variety of beans grown in Canada. The type of grain used include rice, barley, hemp seed, wheat, and rye. The interplay between bean, grain, and microorganisms results in the unique flavour profile of miso.
